Michelin starred chef director Claude Bosi will transform The Peninsula London’s rooftop into Soleil By Claude.

This summer, The Peninsula London invites guests to experience the sun-drenched spirit of the Mediterranean—without ever leaving the city.

From 2 July to 31 August 2025, the hotel’s celebrated rooftop restaurant space will transform into Soleil by Claude—a limited-time dining concept by Michelin-starred Chef Director Claude Bosi.

Set high above Belgravia on the eighth-floor terrace, Soleil by Claude offers an exquisite al fresco dining experience that effortlessly blends Southern European charm with the elegance and precision of British culinary craftsmanship.

This seasonal destination promises more than a meal—it’s an atmosphere. A place where golden-hour Spritzes give way to unhurried dinners under the stars, and every dish tells a story of provenance, patience, and pleasure.

Inspired by the slow rhythms of Mediterranean coastal living, Chef Bosi has curated menus for breakfast, lunch, and dinner that honour both tradition and terroir. Each dish celebrates the richness of British produce while capturing the soul of the Riviera—from delicate Polpo Carpaccio and bountiful seafood platters to seven-hour braised lamb shoulder with Nicoise sauce and whole sea bass flambéed in a salt crust.

Fresh farm-to-table crudités will change weekly, reflecting the peak picks from local growers, while desserts playfully reinterpret the classics—think Baked Alaska with just-picked fruit and buttery tartes inspired by the abundance of summer gardens.

Soleil’s setting is as considered as its cuisine. The terrace, transformed with coastal touches reminiscent of the Côte d’Azur, features an elegant pétanque pit courtesy of Minuty, and a resident weekend DJ sets a gentle soundtrack from Friday through Sunday to capture the carefree cadence of summer evenings.

The cocktail programme is bespoke to the pop-up, with signature creations designed to complement the warm-weather menu, and an expertly selected rosé and Spritz offering that pairs perfectly with the panoramic views of the London skyline.

Following the conclusion of this summer pop-up, Brooklands by Claude Bosi will return on 1 September 2025, unveiling a new Autumn menu at The Peninsula London.
