The Centennial Hotel’s  Justin North talks to Renae about his food at the stunning new look Centennial Hotel in Paddington.

Justin North has long had a reputation in Sydney for making fresh, creative, vibrant dishes.

His move to the eastern suburb’s classic Woollahra pub The Centennial has seen him become even more creative, and has exposed his culinary skills to a wider audience.

In an intimate interview at the hotel, he talks about his love of local product, markets and how he creates such unique dishes.
